Two Peas in a Pot: Black-Eyed & Green Beans

Equipment Needed: Pot, Measuring Utensils, Knife
Ingredients:
1 pound Black-eyed Peas, rinsed and sorted
1 pound Green Bean (added after peas are tender)
1 Onion, Chopped
1 Tablespoon Cajun Seasoning
1 teaspoon Thyme
1/4 teaspoon Sage
1/4 teaspoon Salt
7 Cups Water
Oil
Directions:
Prep the Black-Eyed Peas:
Rinse and sort the black-eyed peas to remove any debris.
Sauté the Onions:
In a large pot over medium heat, sauté the chopped onion until soft and translucent, about 5 minutes.
Start the Pot:
Add to the sautéed onions, Cajun seasoning, thyme, sage, salt, allowing flavors to meld together.
Cook the Peas:
Add the black-eyed peas and 7 cups of water. Stir to combine. Bring the mixture to a boil over medium-high heat for 10 Minutes. Once boiling, reduce the heat to low, cover, and simmer for about 1 hour, or until the peas are tender.
Add the Green Beans:
Stir in the green beans and continue cooking for an additional 10-15 minutes, until the green beans are heated through and tender.
Finish and Serve:
Taste and adjust seasonings as needed. Eat & Enjoy!.
