AKA Cooking Class

Recently, we had the joy of sharing this recipe during a vegetarian cooking class in Dallas, Texas, hosted for the AKA sorority. It was so much fun demonstrating how easy it is to make vegetarian meals and seeing everyone excited to taste dishes on biscuits, mashed potatoes, and even fried tofu. There’s something truly special about sharing comfort-food classics in a plant-based way and seeing the delight on people’s faces. Here are the pics! There’s nothing quite like the rich, creamy goodness of country gravy—that warm, savory sauce that turns biscuits, mashed potatoes, and breakfast plates into comfort food heaven. The best part? You don’t need dairy or animal products to enjoy it! This vegan country gravy is smooth, flavorful, and incredibly easy to make, proving that plant-based cooking can be just as indulgent as the classic version.


Using simple ingredients like flour, butter, and vegetable broth, this gravy comes together in just minutes. It’s perfect for drizzling over hot, flaky biscuits, topping crispy tofu “chicken” or fried seitan, or adding a savory finish to any hearty breakfast or dinner.


With this recipe in your kitchen, you can enjoy all the nostalgia and comfort of traditional country gravy—without compromising your dietary choices or flavor. Quick, creamy, and utterly satisfying, it’s a must-have staple for any plant-based pantry.


Country Brown Gravy

Ingredients:

  • 2-3 Tablespoons Smart Balance Margarine

  • 2 Tablespoons Unbleached All-Purpose Flour

  • 1-2 cups Vegetable Broth

  • Salt or Pepper to taste if needed

Directions:

1. Melt butter over medium heat in a saucepan.

2. Sprinkle the flour over the margarine until flour completely absorbs the margarine to create a roux, which will thicken the gravy.

3. Cook for about 2 minutes stirring frequently, this will remove the fresh taste of the flour.

4. Whisk 1 cup of vegetable broth into the mixture and bring to a boil, whisking frequently to remove all lumps.

5. Reduce the heat to low and taste to see if additional seasonings are desired.

6. Remove gravy from heat, to loosen gravy after cooling add the additional I cup of stock.

7. Pour Gravy over Boca Veggie Burgers for a full meal and add side dishes.
