Naturally Savory BBQ Jackfruit

I first saw a documentary on jackfruit about a year ago and I found a can of it recently on the shelf of my local grocery so I decided try it. It was touted on the documentary as tasting like "pork" but I found it to taste like "beef" - especially when smothered in barbecue sauce. If you want to skip the details: it is good for you. From Wikipedia: Jackfruit Food. The jackfruit, also known as jack tree, jakfruit, or sometimes simply jack or jak, is a species of tree in the fig, mulberry and breadfruit family.

Ingredients:

1 Can Jackfruit (14 ounces)

4 ounces BBQ Sauce

1/2 Cup Chopped Onion

1/2 Tablespoon Corn OR Vegetable Oil

Dash White Pepper

Dash Garlic Powder

Dash Seasoned Salt

Pickles, to taste

Directions:

1. Drain Jackfruit can, warm up oven to 350 degrees. Shred the Jackfruit with a fork, then lay out Jackfruit on non-stick pan (I made the mistake to use foil- next time I will use wax paper). Cook for 20 minutes, then remove the pan.

2. Heat 1 or 2 Tablespoons Corn Oil on Medium-Low Heat and add the Jackfruit to a skillet.


3. Now add the Onion to the skillet.


4. Add the Barbecue Sauce.


5. Add the White Pepper, Seasoned Salt and Garlic Powder and mix the seasonings.


6. Serve warm on a wheat bun with pickles and Naturally Mayo. Pictured above with Naturally Boston Baked Beans, Naturally Cole Slaw, and Naturally Southern Kale Greens.

UPDATE: If you do not dry out the Jackfruit, it retains it's moisture.
