Banana Nut Bread is the ultimate 'Quick Bread'—a term used for breads that use baking powder or soda for leavening instead of yeast. While humans have been mashing fruit into grain for centuries, the banana bread we know today became a staple in American kitchens during the Great Depression. Resourceful home cooks refused to waste overripe fruit, and the invention of chemical leaveners made it possible to bake a loaf without hours of proofing.


Using a Bread Machine takes this convenience to the next level. By automating the mixing and the precise temperature control of the bake, you get a perfectly consistent, moist crumb every single time without the elbow grease. It’s the perfect 'set it and forget it' way to fill your home with that classic, sweet aroma.


And, well, I have bad news for everybody. Earth Balance Soy Spread (the one without the Canola in it) has been discontinued. So what do we do now? Well, I tried Coconut Oil as an alternative. It is a healthy oil, does not cause the arteries to clog up, has a variety of health benefits (skin, hair), and my local stores have decided to carry it at an inexpensive price. So here it is, in Naturally Banana Nut Bread. It has the same consistency as butter when in the refrigerator and the same consistence when melted. As as added a bonus: I could acutally taste a hint of the coconut! This reecipe calls for a bread machine. The disadvantage of this version is that it added 13 calories per slice.


This vegetarian banana nut bread is a deliciously moist and flavorful treat, perfect for breakfast or an afternoon snack. Made with ripe bananas for natural sweetness and studded with crunchy walnuts or pecans, this bread offers a delightful combination of soft texture and nutty richness. It’s spiced with a hint of vanilla, and is free of any animal products, making it a wholesome, plant-based twist on the classic. Whether enjoyed warm with a bit of butter or on its own, this banana nut bread is a satisfying and nutritious comfort food! This recipe is used with an Oster Bread machine.

Banana Nut Bread


Servings: 12-15


Ingredients:

1-2 ripe Banana, smushed

2 Eggs

1/2 Cup Coconut Oil, room temperature, it melts at 80 degrees

1 teaspoon Non-alcoholic Vanilla

1 Cup Flour

1 Cup Cane Sugar

1 teaspoon Baking Soda

1 teaspoon Sea Salt

Directions:

1. Put all the liquids in the bread machine: Eggs, non-alcoholic Vanilla, ripe Banana, Coconut Oil (I used Extra Virgin, cold-pressed).

  1. Add all the dry ingredients: Cane Sugar, Baking Powder, Salt, Pecans or Walnuts (or combination)

  2. Here is a clippette of it:



4. Scrape the inside of the bread machine sides to make sure that you get a "clean" loaf.

Did you know? Lay out all your ingredients on a brown paper bag. It comes in handy when trying to remember which ingredient you have been already put in there (oh did I already put in the salt?) and it makes cleanup easier.
