Eggplant burgers are a flavorful and satisfying plant-based alternative, perfect for a hearty meal. The eggplant’s tender texture creates a juicy, meaty bite, while breadcrumbs help bind the patties together. Served on a bun with your favorite toppings like lettuce, tomatoes, and vegan mayo, these eggplant burgers are a delicious and nutritious choice for vegetarians and anyone looking for a healthy, plant-based option!


Aubergine is also called eggplant (you may find clothing in that color). It is just a fancy way of calling it eggplant. This recipe makes 10-12 "burgers" and is very tasty. You should slice them thickly 1/4 inch to 1/3 inch, for best results.

🍆 How to Choose a Good Eggplant


  1. Look for smooth, shiny skin.A fresh eggplant should have glossy, unwrinkled skin. Dull or shriveled skin is a sign that it’s old or has been sitting too long.


  2. Check the color and firmness.Whether you’re choosing deep purple, white, or striped varieties, the color should be rich and even. Gently press the skin — it should be firm but give slightly under pressure. If it feels mushy or leaves an indentation, it’s overripe.


  3. Keep it light — but not too light.Pick one that feels heavy for its size, which means it’s full of moisture and not dried out inside.


  4. Inspect the stem and cap.The stem should look green and fresh, not brown or shriveled. A healthy stem is a good sign of overall freshness.


  5. Go for smaller to medium-sized eggplants.Large ones can be seedy and slightly bitter. Smaller or mid-sized eggplants tend to have a tender texture and mild, creamy flavor — perfect for burgers.


  6. Use it soon.Eggplants don’t store well for long. Keep them in a cool place or the refrigerator crisper and try to use them within 2–3 days for the best flavor.


Ingredients:

1 Eggplant (make sure it does no "give" to touch and it should be uniform in shape)

1/4 Cup Unbleached Flour

3 Tablespoons Italian Bread Crumbs

1 teaspoon Paprika

2 teaspoons Pink Himalayan Salt

1 Tablespoon Garlic Powder

4 Tablespoons Corn Oil/Olive Oil/Soybean Oil (as it dries out, you may need to add more as cooking)

1 Egg for coating

1 Bread Knife for cutting

Directions:

  1. Put the flour on a plate, add garlic powder, pink Himalayan salt, bread crumbs, paprika, and Mrs. Dash.


  2. Mix all ingredients evenly.

  3. Heat oil in skillet on Medium Heat. Cook on each side for 5 minutes, then turn them and cook for another 5 minutes on the opposite side.

4. Sit them aside on paper towels to drain the oil, then make your burgers.

5. Eat and enjoy!
