If there’s ever a reason to eat raw, it’s the wonderfully short prep time—no baking, frying, or long marinating needed. This Fiesta Zucchini Pasta with Raw Marinara Sauce comes together quickly and easily, giving you a fresh, vibrant meal in minutes. Eating raw has its benefits: none of the natural nutrients are leached out during cooking, so you preserve the full vitamin and enzyme content of the ingredients.
However, not all vegetables are best eaten raw. Tomatoes, for example, become even more beneficial when cooked. As Science Daily reports, cooking tomatoes increases certain health-boosting phytochemicals and enhances their heart-protective and cancer-fighting potential—even though some vitamin C is lost in the process. Still, because cooking diminishes certain vitamins, a balanced diet of both raw and cooked foods offers the best of both worlds.
If you’ve ever tried a 21–30-day raw cleanse, you may have noticed clearer thinking, a brighter complexion, and gradual weight loss due to the naturally clean and nutrient-dense meals. For a deeper look into the pros and cons of eating raw, Healthline provides an excellent overview. And remember: ALWAYS wash your fruits and vegetables thoroughly before enjoying them—you never know what hands have touched them in the store or which pesticides may have been used during farming.
Try it once, and you may find yourself reaching for more raw meals throughout the week.
