Eggplant Pizza
Servings: 4
Prep Time: 35 Minutes
Cook Time: 20 Minutes
Total Time: 1 Hour 15 Minutes
Equipment Needed: Knife, Pot, Spoon, Can Opener, Sheet Pan, Measuring Utensils, Parchment Paper (optional)
Ingredients:
4 Pita Bread, keep frozen until ready to cook
1 Eggplant, medium, cubed
1 Red Bell Pepper, diced
1 Onion, diced
1 Jar , 26 oz Marinara Sauce, your favorite
1 Can, 16 oz Fire Roasted Tomatoes, diced
Cheez Sauce OR Diaya Cheddar Deluxe Cheez Sauce
1 teaspoon Sea Salt OR Pink Himalayan Salt
2 teaspoons Garlic, minced
Pinch Cayenne
1 Tablespoon Italian Seasoning
Handful Black & Green Olive, chopped

Exercise of the Month: "Sit to Stand" exercise, also commonly referred to as a "chair rise" or "chair stand.". Do this exercise 10 times, 5 days per week, 3 times per day. It primarily strengthens the muscles in your thighs, hips, and glutes, which are crucial for sitting and standing up. It is often used to improve balance and mobility, particularly for older adults or people with limited lower body strength. Ideally, you should perform a sit to stand without using your hands for assistance.
Eggplant Pizza
Directions:
Dice a medium-sized Eggplant and place it on Parchment Paper. Bake at 350 degrees for 15 Minutes, browning on both sides.

Meanwhile, in a large skillet, place a small amount of oil on Medium Heat. Saute' Diced Onions, Garlic, and Red Bell Pepper until Onions translucent and Bell Pepper is tender. Add seasonings to taste: Italian Seasoning, Pinch Cayenne, Pink Himalayan Salt OR Sea Salt. There's moisture in the vegetables that will exude naturally from the heat.


By now, the Eggplant should be finished baking, if not, turn the mixture in the skillet to a low temperature until the Eggplant is toasty and remove the Baked Eggplant from the Oven.

Add the Baked Eggplant and Fire Roasted Tomatoes to the skillet and stir.


Add the Marinara Sauce and simmer the mixture for 15-20 Minutes (may have to add Water for desired thickness).



It's time to remove the Pita Bread from the freezer. If you remove it from the freezer beforehand, the crust will be soggy. Cut the Pita in half so it is easier to plate later. Spread the Eggplant mixture onto the Pita.

For those who like cheez, pour some on top, then top it with a mixture of chopped Black and Green Olives.

4 ounces Pimentos OR Roasted Red Bell Peppers
½ Cup Cashews
1 Cup Water
¼ Cup Nutritional Yeast Flakes
¼ Cup Oats
2 Tablespoons Lemon Juice
1 Tablespoon Onion Powder
1 teaspoon Salt
2 Tablespoons Cornstarch
¼ teaspoon Turmeric (optional)
¼ teaspoon Paprika (optional)
¼ teaspoon Garlic Powder (optional)
Variations~
¼ teaspoon Cumin – for Mexican Dishes
Directions:
1. Blend until smooth and creamy.
2. In a pot, place 1 and ½ cups water to boil.
3. Add the Cheez mixure into the pot, stirring until thickened.
