Raw Mango Key Lime Pie: Who needs the oven when you can whip up a slice of paradise? This raw mango key lime pie is tropical, tangy, and impossibly creamy — a fun, refreshing dessert that's ready to steal the show at your next get-together. The silky filling — naturally sweet with a vibrant citrus kick — rests on a crisp graham cracker crust for the perfect balance of textures. Made entirely with wholesome, plant-based ingredients, it’s a feel-good dessert that’s as beautiful and satisfying as it is simple to make. Whether you’re hosting a gathering or just craving something light and uplifting, this pie brings a little sunshine to every slice.

Mangoes: Nature’s Golden Treasure

Mangoes, often called the "king of fruits," are a tropical powerhouse beloved for their juicy sweetness and vibrant color. Native to South Asia but now grown across warm climates worldwide making them both a delicious and nourishing addition to any dish. Their natural sugars and creamy texture make them perfect for raw desserts, smoothies, and sauces. In this recipe, the mango’s tropical notes pair beautifully with the tartness of lime, creating a fresh and lively flavor profile that's both bright and satisfying.

🍋🥭 Mango Tips: Picking and Ripening for Perfect Flavor

How to Choose a Ripe Mango: Don’t rely on color alone — ripe mangoes can be green, yellow, or red depending on the variety. Instead, gently squeeze the fruit; a ripe mango will give slightly under pressure, like a ripe avocado. You should also notice a sweet, fruity aroma near the stem. Avoid mangoes that are overly soft, wrinkled, or have large dark spots.

How to Ripen Mangoes Faster: If your mangoes are still firm, place them in a paper bag at room temperature. To speed things up even more, add an apple or banana to the bag — these fruits give off ethylene gas, which naturally promotes ripening. Check daily and use your mangoes as soon as they become fragrant and slightly soft.

Limes vs. Key Limes: What’s the Difference?

While both regular (Persian) limes and key limes bring a welcome burst of tartness, they differ in a few important ways. Key limes are smaller, more aromatic, and slightly sweeter than their more common counterparts. They also have a thinner skin and a more floral, intense flavor that adds a unique depth to recipes, especially in desserts like the classic key lime pie. Regular limes are more readily available and still provide that sharp, refreshing zing, making them a convenient substitute when key limes aren’t in season. Whether you use key limes or standard limes, the citrusy brightness is essential for balancing the sweetness of the mango in this luscious raw pie.

Did you know? Mangoes are rich in vitamins A and C, antioxidants, and fiber.

May Song of the Month: Total Praise by Dallas City Temple SDA

The Dallas City Temple Seventh-day Adventist Church traces its roots back to the late 1800s, with the first group of converts in the Dallas area being gathered by Seventh-day Adventist laymen. The first church site opened in 1919 as a small tent on Central Avenue, later moving to its first permanent building in 1929. Seventh-day Adventist laymen, like the Rust brothers, came to Texas and gathered the first group of White converts in the Dallas area in the late 1800s. D.M. Canright, visiting Texas in 1876, reported that one of the young members, Eddie Capman, was conducting a night school for Blacks, teaching them to read and write. In 1956 Elder J.E. Cox, Jr. organized the adult choir which became known throughout the city over the radio.

"Total Praise" is a soaring anthem of gratitude, worship, and deep spiritual surrender. Written by Richard Smallwood in 1996, the song weaves heartfelt lyrics with rich, classical-inspired harmonies, creating a moving expression of trust and devotion to God. The simple yet profound words — "You are the source of my strength, You are the strength of my life" — have touched countless hearts around the world. With its dynamic build, majestic chords, and emotional crescendos, "Total Praise" invites both singers and listeners into a moment of pure, heartfelt worship, making it a beloved choice for choirs and congregations alike.

Just like the song ‘Total Praise’ lifts the spirit with every note, this Mango Key Lime Pie brings a burst of brightness and joy with every bite — a sweet reminder to savor both the blessings and the simple pleasures. Lyrics at the end of the post.

May Exercise for the Month: Squats

Squats are a foundational exercise that build strength, stability, and flexibility in the lower body. Often called the "king of exercises," squats target the legs, core, and even the back, promoting better posture and functional movement. Whether using just body weight or adding resistance, squats are a versatile and essential part of any fitness routine.

How Many Squats Should You Do?

If you're new to squats, start with 10 to 15 repetitions for 2 to 3 sets, resting briefly between each set. As your strength and confidence grow, work your way up to 20 to 30 repetitions for 4 to 5 sets. Remember, it's not about perfection — it's about consistency. Listen to your body, focus on good form, and celebrate every bit of progress!

Lyrics for "Total Praise"—Richard Smallwood

(Chorus)

Lord, I will lift my eyes to the hills

Knowing my help is coming from You

Your peace You give me in time of the storm

You are the source of my strength

You are the strength of my life

I lift my hands in total praise to You

(Chorus)

Lord, I will lift my eyes to the hills

Knowing my help is coming from You

Your peace You give me in time of the storm

You are the source of my strength

You are the strength of my life

You are the source of my strength

You are the strength of my life

I lift my hands in total praise to You

(Refrain)

Amen, Amen, Amen, Amen

Amen, Amen, Amen, Amen
